Welcome to Eating with Ernest! Mercy Home’s Chef Ernest Jamison will be sharing some of his favorite recipes that he also makes to feed our kids. To celebrate Black History Month, Ernest made salmon croquettes, which are a staple of celebrating this special month! A key part of Mercy Home’s treatment is connecting our children with their culture, and food is a great way to do that. Bon appetit!
Ingredients:
15 oz canned or fresh salmon
1 small diced onion
1 small diced green pepper
1 small diced red pepper
1 small diced orange pepper
1 tsp ground black pepper
1 tsp paprika
1 tsp salt
1 tsp parsley
2 large eggs beaten
1/2 cup panko bread crumbs
1/2 cup olive oil
Directions:
Combine salmon, diced onions, green peppers, red peppers, orange peppers, black pepper, paprika, salt, parsley, beaten eggs and panko bread crumbs
Fold the ingredients until everything is well combined
Form the salmon mixture into patties
Pour 1/2 cup of olive oil into a skillet, and place it over medium heat
Once oil is hot add in the patties and fry on each side until golden brown
Serve and enjoy!
