Savory and Sweet Plantain Chips

The kids at Mercy Home for Boys & Girls are back at school. You know what that means? They’re hungry!

In this 3-part series of “Noshing with Nyah,” co-worker Nyah creates after school snacks perfect for munching while doing homework! In this first video, she makes plantain chips two ways; savory and sweet. Recipes below!


Savory Plantain Chips

Ingredients:

  • 2 green plantains
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 2 tsp oregano
  • 2 tsp curry powder
  • 3 tsp smoked paprika

Directions:

Preheat oven to 375 degrees.

Slice plantains and place in mixing bowl.

Mix all ingredients together, pour over raw plantains.

Spread on a baking sheet and bake at 375 degrees for 14-18 minutes, checking after 12 minutes.

You may not be able to fit all the plantains on one baking sheet, so you can bake these in 2 separate batches.


Sweet Plantain Chips

Ingredients:

  • 2 ripe plantains
  • 2 tbsp olive oil
  • 1 tbsp brown sugar
  • 2 tsp allspice
  • Salt to taste
  • 1 tbsp coconut flakes

Directions:

Preheat oven to 375 degrees.

Slice plantains and place in mixing bowl.

Mix all ingredients together, pour over raw plantains.

Spread on a baking sheet and bake at 375 degrees for 14-18 minutes, checking after 12 minutes.

You may not be able to fit all the plantains on one baking sheet, so you can bake these in 2 separate batches.
